Steaks on a grill

Most days at around 5 oclock there’s a conversation between Antonio and I that goes a little something like this. “What do you want to eat for dinner?” “I don’t know, what do you want?”

So the other day I wanted to cook something other than the usual.  And lately I’ve craving a good steak. So I decided to TRY and cook a few for dinner.

I’ll tell you a few things I learned in the process.

  • Don’t decide to try to cook something new for dinner at 6:00
  • Only try 1 new dish per meal. (especially ay 6:00!)
  • Do read the entire recipe before deciding to cook something new at 6:00

Because it’s getting cool outside, and because our grill is only big enough to burn a few hotdogs at a time, I decided against cooking them on the grill. So I scoured the web and pieced together the method I wanted to try.

First, all recipes state that the most crucial part of cooking a steak is choosing quality meat, and many suggest a rib eye at least 1 inch thick. So that’s what I bought and dusted off my cast iron skillet.

Here’s what worked for me:

  1. Take steak out and blot dry with paper towel. Let meat come to room temperature.
  2. Preheat the oven to 500 degrees. Put cast oil skillet into oven.
  3. Season both sides of meat with oil and steak seasoning or salt and pepper.
  4. Turn stove eye on high.
  5.  Take skillet out with an oven mit. and place it on eye. Place steak into skillet and cook for 1 minute. Use thongs to flip steak, and cook other side for 1 minute.
  6. Put skillet into oven for 2 minutes, flip steak and cook for another 2 minutes.
  7. Let rest for a few minutes before eating.

I’ve slowly grown to appreciate a good steak. When I first started ordering them whenever we were out I’d always want the steak cooked well done. Mainly because that’s what I had always heard others say. But it wasn’t until Antonio pointed out that it tastes much better cooked medium well. So if you prefer it cooked differently just adjust the time in the oven.

They came out great. Like better than the restaurant. Really! And I’m not just saying that because I was starving because I finished cooking at nearly 8 oclock I cooked them. I would have taken a picture, but it was so late, and I was so hungry I forgot all about that.

But we did have leftovers, so Antonio and I had steak and eggs the next day. And the leftovers tasted even better than the night before. It was so easy that I’m mad that I was ever intimidated to try it before.
